Best Ever Easy Coleslaw Recipe
Coleslaw emanates many childhood memories of Bbq’s and family get togethers. Y0u could always plan on their being a coleslaw and potato salad on the table. My Auntie used to always put shredded Kraft cheese and pineapple pieces in hers.
These days we are spoilt for choice with ready made salads at grocery stores. I do tend to purchase the dry slaw mix and add my own flavours. This res quick easy and and very tasty. If you like it spicy add a tablespoon of Some Like it HOT sauce and mix it through. But the whole family will love this quick and ever so tasty recipe.
Its origins can be traced back as far as the ancient Romans, who served a dish of cabbage, vinegar, eggs and spices. The Dutch who founded New York state grew cabbage around the Hudson River that they used in a shredded cabbage salad they called koosla (kool means cabbage and sla is salad).
Coleslaw has certainly had a huge comeback over the last few years with the advent of BBQ cooking becoming so popular. I believe though, a lot of people really stuff up a somewhat super easy salad.
What makes a good coleslaw to me is the addition of ‘acid’ . Too many people just add mayonnaise which depending on quality may or may not have a good flavour. In this recipe the addition of the pickles and the pickle juice and the acidic flavour to help balance the creaminess of the mayonnaise and the crunch of the cabbage.
This recipe really is easy as ….and a fool proof recipe full of flavour.
Ingredients:
Coleslaw mix (grab a bag of coleslaw mix from the super market, otherwise shred some cabbage, and carrot)
Chilli Pickle Me Cucumber Pickles ( Chop a couple of table spoons up)
Pickle Juice (straight from the Jar! 3 or 4 tablespoons)
Mayonnaise (Your choice of brand, we all have our favourite. If you are Vegan use vegannaise)
Shallot (green onion, sliced)
Pepper
Method:
Mix all ingredients together and refrigerate.
Best used the same day. But can be made a day ahead of time. It just wont have as much crunch.
